Our Story
Humboldt Craft Spirits was originally founded in 2011 by Fred and Jackie Moore, fifth generation Humboldt County locals with a passion to build one of the first local craft distilleries.
It was re-established in 2022, now owned and operated by husband and wife team David and Tera Cook. David and Tera are Northern California natives that came to Humboldt County and discovered their passion for the craft beverage industry. After 20 years in the craft beer industry they purchased Humboldt Craft Spirits with a desire to expand their passion for the craft beverage industry and to build a future and business for themselves.
Humboldt Craft Spirits is the first and only licensed distillery in Eureka, CA.

Each batch starts with a mash made from barley, barley malting flour, corn and yeast. Each batch is first run through a 250 gallon stripping still and then refined through a 50 gallon spirit still and 12-plate rectification column.

But, like any small business or great family we rely on our Chief Moral Officers Okja and Blue to keep the “spirits” high!
Bottling, maintenance and project crews are also manned by a fantastic support system of family and friends.
